Creamy Tomato and Basil Soup

 Creamy tomato basil soup is a classic and comforting dish that combines the rich and tangy flavors of crushed tomatoes with the fresh and fragrant notes of basil. This soup is typically made with a creamy base, like heavy cream, to give it a velvety texture and balance out the acidity of the tomatoes. Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes
  • 2 cans (28 ounces each) crushed tomatoes
  • 2 cups chicken or vegetable broth
  • 1/4 cup chopped fresh basil
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Crusty bread for serving

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent.

  2. Add the minced garlic and red pepper flakes and cook for another 1-2 minutes until fragrant.

  3. Pour in the crushed tomatoes and chicken or vegetable broth. Stir to combine, then bring to a simmer.

  4. Simmer for 15-20 minutes, until the soup has thickened slightly and the flavors have melded together.

  5. Use an immersion blender to puree the soup until smooth (alternatively, you can transfer the soup to a blender and puree in batches).

  6. Stir in the chopped basil and heavy cream. Season with salt and pepper to taste.

  7. Serve the soup hot with some crusty bread on the side for dipping.
